Homemade green pesto sauce (3 types)

Pesto is one of most people’s favourite sauces without exaggeration. A sauce that will turn your steamed vegetables into a cosmically delicious side dish, it’s great to add to your favourite pasta, to spread on bread for a morning sandwich, to serve as a nutritious dip to fresh crunchy vegetables. Of course it should be added to the famous caprese salad with tomatoes and mozzarella.
I have my own versatile, all-time favorite that works even for those with dietary peculiarities.
We’ll need:
- 1 cup basil
- 1/4 cups pine nuts
- 3 tbsp of nutritional yeast (I make most often with aged goat cheese)
- 1/2 cups of olive oil
- 1 tsp lemon juice
- salt and pepper - add to your taste (if using aged cheese, you can leave it out)
- 1/2 cloves of garlic
Next, everything is simple.
Snip the basil leaves (the smallest leaves are always the most flavorful! don’t miss them), wash, dry well.
For a richer flavor, dry the pine nuts in a frying pan for just a couple of minutes.
Next, put all the ingredients on the list into a blender and blend to a homogeneous mass. Taste at once! Our homemade pesto sauce is stored in the refrigerator for 3-5 days.
And now let’s consider a few alternative combinations in pesto sauce, based on everyone’s requests and preferences:
- classic: basil + pine nuts + olive oil + parmesan cheese
- kale/spinach + walnuts + olive oil + pecorino cheese + lemon juice
- arugula + hemp seeds + olive oil + nutritional yeast + lemon juice
All of the options are awesome! Experiment.
