Financier nut cakes (flourless) with chocolate chips

Financier - it’s always about the nuts, which is why I love this type of cupcake immensely. To describe it simply - it’s the same muffin, but with a more viscous, creamy texture. I use hazelnut flour, you can substitute with any other nut flour (pistachio, almond). I also added 100% bitter chocolate chips.

We will need:

  • 100 g hazelnut flour
  • 50 grams of 100% bitter chocolate
  • 1 tsp of baking powder
  • 4 pcs egg whites
  • 50 g of ghee (can be replaced with butter)
  • 50 g of raw sugar

Preheat the oven to 160 C. Melt the butter and let it cool.
In one bowl, mix the nut flour, baking powder, baking powder and salt. In another, whisk the egg whites with the sugar until it is dissolved. Then gradually pour the butter into them with a thin stream, without stopping to stir. Mix the dry ingredients with the wet ones. Finally add the chocolate chips.

I bake financier in small silicone muffin molds, you can take one medium one. In this case, the cooking process will take a little longer. Pour the batter not to the edge, as it will rise. Bake for 25 minutes.
Let them cool slightly in the mold, then lay them out. These are delicious!

Store the financier in an airtight container or food wrap in the refrigerator.
