Chocolate pear tart (gluten-free, lactose-free)

The perfect chocolate cake. It is suitable for people who exclude gluten and dairy products in their diet. Yes and in general for today to reduce the amount of gluten and lactose would not hurt many people.
We cook it with olive oil. We take neutral, without a pronounced flavor.
The size of my mold is 20*9 cm
We’ll need
- 2-3 pcs of small, firm pears
- 50 g cocoa powder
- 150 ml hot water
- 100 g rice flour
- 50 g almond flour
- pinch of salt
- 2 eggs
- 150 g raw sugar
- 150 ml olive oil
Preheat the oven to 160 C.
Carefully dissolve the cocoa powder in hot water: to do this, gradually pour the water into the cocoa, stirring constantly with a whisk so that there are no lumps.
I cut the pear into small squares of 1-1.5 cm in size
Beat the eggs, olive oil and sugar with a mixer until homogeneous. Pour the cooled chocolate mixture into the egg mixture in a thin stream. It is important to pour in the cooled mixture so that the eggs do not curdle in the process.
Next, add the flour and mix well. At the end, add the cut pear.
Spray the baking dish with olive oil and cover with parchment.
Pour the mixture into the mold. Bake for 40-45 minutes. Check for doneness with a toothpick. Take out and let cool. Lay out on a plate, brew your favorite tea or make coffee. This will be a great addition to a full breakfast or lunch on your day off.
