Banana bread (no sugar, syrups or dates)
For dessert/17 January 2021

A fabulous banana bread that I use absolutely no sweeteners in except for the banana itself. It’s a weekend bread, perfect for breakfast with coconut yogurt and berries or topped with tahini paste made from toasted sesame seeds. And just by itself, banana bread is incredibly delicious without any add-ins. The recipe is too simple.
We will need:
- 300g oat flour (you can use spelt flour)
- 3 eggs
- 3 sweet bananas (one more for decoration)
- zest of 3 limes
- 100 ml of plant milk
- 0,5 tsp baking powder
- 1 tsp baking soda
- optional cinnamon
- pinch of salt
If you replace the oat flour with spelt flour - the cake will rise even more.
Preheat the oven to 180 C.
Mix all the above ingredients in a blender. If there is no blender - enough to mash bananas with a fork, mix them with eggs and vegetable milk, beat everything well with a whisk, then add all the dry ingredients.
Pay attention to the consistency of the dough, if it is too thick - dilute with milk as needed.
Transfer the dough into the baking mold. On top of the bread can be decorated with a banana: cut it lengthwise and lay it on the surface. Children are always delighted 😊
We put baking in the oven for 40-50 minutes, readiness check with a toothpick.
Bread is ready! Try it, it will not leave absolutely no one indifferent.
